Yellow Split Pea Soup with toasted Pumpkin Seeds
12C Water
2C Yellow Split Peas
2 Potatoes, peeled and diced
2 Carrots, washed and diced
2 stalks of Celery (chopped)
1 Onion, Chopped
1 Ts Sea Salt
Fresh Ground Black Pepper
1Ts Italian Seasoning
1/2C toasted Pumpkin Seeds
Combine split peas and all the vegetables with water. Bring to boil; add italian seasoning (or dill if you prefer). Let boil briskly at medium-high heat for 15 minutes. Lower heat to medium for another 30 minutes. then simmer for 10 minutes. Add sea salt and pepper at the end and garnish with toasted pumpkin seeds.
