Udon with Shitake, Zucchini and Pepper

Cook udon noodles 8-10 minutes, then drain. Cool with cold water

  • 1 Zucchini

  • 12 fresh Shitake Mushrooms

  • 1 Yellow Pepper

  • 3T Sesame oil

  • 3 cloves Garlic, chopped

  • 3T Tamari

  • 1Tb Mirin

Heat oil in wok or skillet. Add garlic and vegetables over medium-high heat. Stir fry for 2-3 minutes. Add noodles, tamari and mirin and cook until hot. Serve immediately.
