Udon Noodles with Vegetables

3T Tamari

  • 1 Red Pepper, julienned

  • 2 Carrots, matchsticks

  • 8oz. Mushrooms, sliced

  • 2T dark Sesame

  • Oil 4-5 cloves Garlic, chopped

  • 1 piece Ginger, grated

  • 2 packages Udon Noodles, cooked as directed

Cook and cool udon noodles and keep aside while sauteing other ingredients (except tamari) in dark sesame oil.

After 7-10 minutes, toss in cooked. noodles (take off heat) and mix with sauteed vegetables. Add tamari and serve with toasted sesame seeds.
