Steamed Butternut Squash with Toasted Pepitos


Before starting squash, place I Cup of Pepitos or Pumpkin Seeds or Sunflower Seeds in hot cast iron skillet or coated skillet. Stay with them and turn constantly for 2 minutes until toasted. Season with tamari or sea salt. Peel and clean squash. Cut into small slices. Steam for IS minutes or until tender. Drain. Add seeds to squash.
