Mock Potato Salad

1/4 C "Nayonaise" (Tofu)

  • 1 head Cauliflower

  • 1 Red Onion

  • 2 ribs of Celery

  • 1 large Carrot, grated

  • Sea Salt to taste

  • Freshly ground black pepper to taste

  • 1 ts ground Mustard

Cut cauliflower into small florets and steam until fork-tender. Drain. Let cool for 10-15 minutes. Add remaining ingredients and mix well.
