Miso-Yam-Celery Soup

I Onion, sliced in crescents

  • 1 large Yam, peeled and chopped

  • 3-4 Pieces of Celery, chopped

  • 1 small piece of Kimbu

  • 12C Water

Add chopped vegetables to water plus Kimbu. Bring to boil, lower heat to medium and let cook for about 20 minutes. Lower heat to simmer and add 3 to 4T of barley or sweet white miso. Gar-nish with chopped scallions.
