Miso-Yam-Celery Soup
I Onion, sliced in crescents
1 large Yam, peeled and chopped
3-4 Pieces of Celery, chopped
1 small piece of Kimbu
12C Water
Add chopped vegetables to water plus Kimbu. Bring to boil, lower heat to medium and let cook for about 20 minutes. Lower heat to simmer and add 3 to 4T of barley or sweet white miso. Gar-nish with chopped scallions.
