Creamy Potato-Corn Chowder
3/4C Rolled Oats
I Onion, chopped
Fresh Dill
Tamari or Sea Salt
1 pkg. Frozen Corn - organic
2 ribs Celery, chopped
8C Water
It Black Pepper, freshly ground
1 Red Bell Pepper, chopped
3 Potatoes, peeled and chopped
1 Liter Pkg. Soy Milk
Put peppers, onions, celery, potatoes, water, corn, and soy milk in pot. Over medium-high heat, bring to boil. Skim foam off top and lower heat to medium. Let cook 15 minutes. Add 3/4C rolled oats and cook slowly for a
nother 25 minutes. Toward last 10 minutes, add fresh dill and tamari or sea salt. Use sea salt ifyou want lighter soup. Sea salt and tamari are for salt so just add until taste good to you.
