Black Beans with Dried Daikon and Ginger
Soak beans overnight and drain water; put black beans in pot of water to cover.
Cut 2 onions in crescents and add to water; bring to a boil.
If using pressure cooker, let come to boil and put lid on. Let come 140 to pressure; lower heat to low and cook for 35-40 minutes.
Meanwhile, soak dry daikon in 3 oz. of bancha tea and tamari for 20 minutes.
When black beans are tender, add 3 T of tamari and some ground garlic and grate or chop fresh ringer and add to beans.
Take dried daikon out of bancha/tamari mixture and add to black beans.
Garnish ,vith grated carrot and sliced scallions.
