Red Miso-Shitake Soup
Small bag of dried Shitake Mushrooms
1 Carrot
1 strip of Kimbu
3T Red Miso 10-12C Water
1 Onion Scallions for garnish
In small bowl or pot, soak shitake mushrooms for 20 minutes. Combine other Ingredients and let come to slow boil. Let stock boil on low heat. After 20 minutes take shitake mushrooms out of water and cut into strips. Add to stock. Let cook for 15 minutes. Lower heat to simmer and add miso.
