Pintos with Miso and Corn

2C Pinto Beans

  • 10 oz. frozen organic Corn

  • 1 large Green Pepper,

  • chopped 1 large Onion, sliced in moons or chopped

  • 5-6C Water

  • 3T White Miso Flavor

  • Chili Powder or Cumin and Garlic, or just delicious with an extra pinch of sea salt

  1. Soak Pinto Beans Overnight

  2. Drain pintos and add water and onion. Bring to boil. If using pressure cooker, lower heat to medium. Put lid on and once up to pressure, put heat on low and cook for 30 minutes.

  3. If open boiling, boil for about 40-45 minutes until beans are tender. Liquid should be even with level of beans. If too much water, drain some out.

  4. When beans are almost done, put in corn and green pepper.

  5. Let simmer for 10-15 minutes.

  6. Add miso and seasoning
